Does anyone know how to do it?

Isn't that a nice beam reach? Why would you want to tack or gybe?

Perhaps to avoid hitting land, for example in the Sound of Luing.....

Get a stronger boat and use the bounce-tack manoeuvre?

Don't you find that tends to result in spilt coffee if undertaken at 11:00 hrs?
