digestive biscuits

It's the end of civilisation as I know it. Not only do the modern suggestive bix fall to slushy pieces within seconds of being dunked in the hot chocolate, but an unopened packet left on board since the early summer, and still within a resucitable date, has decided to turn to crumbs when opened. Weevils ?

What do real sailors eat for biscuits on board please ?

Plain Chocolate Digestives for us. The choccie holds 'em together for dunking - but not long term immersion - nothing will survive that except genuine shortbreads.

Also Ginger biccies are in the medical supplies as a seasickness remedy. :D

My Biscuits

* 200g sifted plain flour and some for just in case it is too gooey as well as dusting
* 150g slightly salted butter. I use Lurpak
* 150g light muscovado sugar
*2 scotch bonnet chillis
* 1 egg.

Beat together the butter and sugar until you have a creamy and smooth paste.

Stir in the chopped chillis well

Beat in the egg.

Carefully and gently fold in the flour. If it looks and feels too gooey, add a little more flour to stiffen the mixture.

Lay out a stretch of cling film and get your hands dirty! form the messy sticky mixture into a long fat sausage shape of approx 20cm long.

Roll it up and stick in in the fridge for an hour to firm it up.

Preheat oven to 180 degrees.

Remove the biscuit dough and slice into 5cm thick ovals (or rounds. Stick them onto a non stick oven tray and whack 'em in till they start to go a a little golden (should take approx 10-15 mins. Remove from oven and cool on a wire rack.

I've consumed a lot of malted milk biscuits aboard this season. You have to be precise with the dunk time and technique is everything. With the biscuit held between thumb and forefinger I give it a couple of little taps with the nail of my ring finger just before the dunk. This both ameliorates the problem of those annoying crumbs at the bottom of the mug and will also detect most of the hidden structural weaknesses that can lead to such diappointment.

This should be in Tip of the Week. :)

You could still resurrect them by making a cheese cake. Ask your galley slave to do this for you.

It's my biscuits he's on about. Every so often he does a 'Raffee Raid', when I'm not looking, and some of the goodly store of crumbly comestibles goes down the Way of All Wagon Wheels - and my good cheesy water biscuits go to the blurry dawgs....!

Wouldn't mind so much, but he leaves crumbs on the chart table when he's busy breaking the leads of all the nav pencils....

We have some Italian confection which come loose in a clear bag, I can't remember the name of them. And Ginger Nuts which are wholesome and manly.
Tis but a small leap from there to the bacon butty, so no need for anything else really.
